MAKES 1 SERVING
Ingredients:
1 large egg
1 large egg white
Dash ground cinnamon
Dash ground nutmeg
2 slices wholemeal bread
2 tsp. butter
½ medium banana, sliced
½ tsp cinnamon
1 tsp maple syrup
¼ tsp vanilla extract
Directions:
1. In small bowl, whip egg, egg white, cinnamon, nutmeg and vanilla.
2. Dunk and coat bread slices in egg mixture, and cook on grill or pan until they are golden brown, about one minute per side.
3. Add butter to pan and place over medium heat. Once butter has melted, add sliced banana, cinnamon, vanilla extract and maple syrup. Stir to combine and sauté until they are just cooked and soft, about three minutes.
4. Pour cooked bananas on top of French toast. Top with a dollop of Greek yoghurt and dash of cinnamon.
